Hypsizygus tessulatus is an oyster-like mushroom with a superior flavor and texture. It is easy to grow, very tasty and lacks the extremely high spore loads associated with other oyster species. There is some evidence of medicinal anti-tumor activity.
As with all oyster mushrooms, this species is very sensitive to high CO2 levels. Without proper air exchange the mushrooms will grow with reduced caps and elongated stems. For best texture and flavor, harvest the mushrooms before the cap flattens out.
Clean mycelial cultures are now being provided in syringes for ease of inoculation or your favorite sterilized substrate.
